Chimichurri Pasta Salad

This might be my favorite pasta salad recipe ever! And it’s packed with flavor and nutrition.

Ingredients

Base

  • 8 oz pasta of your choice
  • 1 cup sliced almonds
  • 1 cup red onions, chopped
  • 1 cup parmesan cheese, shaved
  • salt

Instructions

  • Add a pinch of salt to the pasta water and cook the pasta according to package instructions. 
  • Drain the pasta and let it cool.
  • Mix the pasta, chimichurri, almonds, red onions, and parmesan cheese in a large bowl.
  • Add salt to taste.
