Blueberry Coconut Popsicles

Sweet, tangy blueberries with a smooth coconut finish

Ingredients

  • 1 cup full-fat coconut milk
  • 1 cup fresh or frozen wild or regular blueberries
  • 2 Tbsp raw honey*

Instructions

  • Blend all ingredients in a high-speed blender or food processor or with an immersion blender.
  • Pour the mixture into reusable popsicle molds, place the sticks in the molds, and freeze for 4 hours or until completely solid.

-*You may use another sweetener, such as maple syrup, instead of honey if you prefer.
