Elderberry Gummies

Ingredients
- 1/2 cup dried elderberries
- 2 cups water
- 1 Tbsp gelatin powder
- 1/2 cup raw honey*
Instructions
- Pour the elderberries and water into a saucepan and simmer for 20 minutes with the lid on.
- Remove the lid and simmer for another 15 minutes or until the liquid has reduced by about half.
- Pour the syrup into a bowl using a fine mesh strainer to catch the elderberries. Press any excess fluid out of the elderberries.
- While the liquid is still warm, finely sprinkle gelatin into the warm syrup while whisking rapidly.
- Let the syrup cool some to avoid destroying some of the beneficial enzymes and antioxidants of the raw honey you will use.
- Stir in the raw honey before the syrup thickens too much.
- Pour the syrup into a small glass storage container approximately 4x4 inches or 10x10 centimeters.
- Refrigerate for an hour or until set. For best results, refrigerate for 12 hours as the texture will improve.
- Cut into squares and enjoy.
