Elderberry Syrup
Boost your immunity with this rich, antioxidant-packed elderberry syrup.

Ingredients
- 1/2 cup dried elderberries
- 2 cups water
- 1/4 cup raw honey*
- 1-2 tsp arrowroot powder (optional)*
Instructions
- Pour the elderberries and water into a saucepan and simmer for 20 minutes with the lid on.
- Remove the lid and simmer for another 15 minutes or until the liquid has reduced by about half.
- Pour the syrup into a bowl using a fine mesh strainer to catch the elderberries. Press any excess fluid out of the elderberries.
- Optional: Return the syrup to the pot on low to medium heat. Finely sprinkle in the arrowroot powder while whisking rapidly and cook for another 3 minutes or until thickened. Do not overheat, as the arrowroot powder will begin to break down.
- Remove from heat and let the syrup cool fully, as the hot syrup will kill some of the beneficial components of the raw honey you will be adding. I usually place the syrup in the refrigerator to cool faster.
- Stir in the raw honey.

-*Feel free to adjust the honey to your desired level of sweetness. 1/2 cup will make a highly sweet syrup. For a vegan option, substitute maple syrup.
-*1 tsp arrowroot powder for minimally thick, 2 tsp for more traditionally thick.
-Substitute other thickeners such as corn starch as desired.
