Ingredients
- 1 cup lime juice (~10 limes juiced)
- 1 1/2 cups frozen or regular raspberries*
- 1/4 cup raw honey
- 1/3 cup gelatin*
Instructions
- Blend the lime juice and raspberries in a high-speed blender until smooth.
- Add the raspberry mixture to a small saucepan and sprinkle with gelatin. Let the gelatin soak up the liquid (you may mix it in slightly if it does not all get soaked up).
- Let the gelatin sit for 5 minutes. This will keep it from clumping once heated.
- Heat the raspberry mixture until hot but not boiling, and stir until the gelatin dissolves.
- Pour into a glass food storage container. I use a 6x8 in (15x20 cm) rectangular container.
- Refrigerate for an hour or until set. For best results, refrigerate for 12 hours as the texture improves.
- Cut into squares.
- Store in an airtight container in the refrigerator for at least a week.

Notes
-*Use any variety of fruit you would like.
-*For a plant-based option, use 1 1/2 tsp agar agar instead of gelatin. Add the agar agar to your liquid mixture while still cold and boil, stirring frequently, for 2-3 minutes. Remove from heat.
