Stovetop & Microwave Popcorn

Homemade popcorn is the perfect wholesome snack: light, crunchy, and delicious but guilt-free!

Ingredients

  • 1 Tbsp ghee or other cooking fat/oil*
  • 1/4 cup popcorn kernels
  • salt to taste (optional)

Instructions

Stovetop

  • Place the cooking fat/oil in a medium pot on medium heat.
  • Add two kernels of popcorn and place the lid on the pot.
  • Once the kernels pop, carefully remove them so they don’t burn. Now your oil is hot enough.
  • Remove the pot from heat, add the rest of your kernels, and move it back and forth so they all get coated in the cooking fat/oil. Leave the kernels for 30 seconds to 1 minute. This does two things: it lets all the kernels start heating evenly without the oil overheating, and it brings them to the same temperature so they’re more likely to pop simultaneously, preventing any burning.
  • Place your pot back on the stove on medium heat with the lid slightly vented. This will keep your popcorn from steaming and getting soggy.
  • Move your pot from side to side occasionally while the kernels pop, and remove it from heat when the popping slows to just a few seconds between each pop.
  • Finish with salt or any of your favorite toppings.

Microwave

  • If using cooking fat, add it to a large, microwave-safe bowl and heat for a few seconds until melted. Add the popcorn kernels, stirring to coat them evenly. If you prefer oil, drizzle it over the kernels and mix to coat. You can also skip the fat or oil if desired. Cover the bowl with a microwave-safe plate. Other popping options include using a silicone popcorn bowl with a lid or a folded paper bag (just be cautious of bags that may release unwanted chemicals into your popcorn).
  • Microwave the popcorn for 2-4 minutes, or until the popping slows to just a few seconds between each pop.
  • Finish with salt or any of your favorite toppings.

-*I also recommend other high-heat cooking oils and fats, such as avocado oil, coconut oil (refined), or beef tallow.
-One of my favorite—and easiest—ways to make popcorn is to microwave it without cooking fat or oil. Once it’s popped, I drizzle it with extra virgin olive oil, give it a few good tosses, and finish with a sprinkle of salt.
