Cashew Cream Dressing

Ingredients

  • 1 cup raw cashews*
  • 2 Tbsp lemon juice (1 lemon, juiced)
  • 2 tsp Dijon mustard
  • 1/4 cup + 2 Tbsp olive oil
  • 2 small garlic cloves
  • 1 tsp salt
  • 1/2 cup water, plus more as needed to thin

Instructions

  • Blend all ingredients in a high-speed blender or food processor until very smooth.
  • Add more water to thin to the desired consistency.

-*If you don’t have a high-powered blender, soak the cashews in water for 4 hours—or do a quick soak in hot water for 20 minutes. Drain before use.
