Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
In a medium bowl, mix together the almond flour, coconut flour, psyllium husk, allulose, baking powder, and salt.
In a separate bowl, beat the softened butter, egg, and vanilla with a whisk until smooth and well combined.
Add the dry ingredients to the wet ingredients, mix with a spoon, and then use your hands until a thick dough forms.
Shape the dough into a log about 2 inches in diameter and (optional) refrigerate for 10 minutes to keep it from cracking when cut.
Once chilled, cut into 1/4-inch thick rounds.
Place the cookie slices on the prepared baking sheet, spacing them slightly apart. Bake for 15 minutes or until lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. They will harden more as they cool.
