
Zucchini Noodles—No Fancy Equipment

Ingredients
- 2 medium zucchinis, ends removed
- salt for draining
Instructions
Choose Your Noodle-Making Method
- Box Grater Method: Use the large holes of a box grater. Tilt the grater slightly and hold the zucchini vertically. Slide it down the grater, stopping once you reach the seeds. Rotate and repeat until only the seedy core remains (discard or save for another use).
- Vegetable Peeler Method: Use a vegetable peeler to create long, thin strips. Apply more pressure for thicker ribbons or lighter pressure for thinner ones. Stack the strips, then slice them into noodle-like strands with a knife.
Drain
- Place the zucchini noodles in a colander and toss with salt. Let them sit for 30 minutes to draw out excess water.
- After resting, use your hands to squeeze out as much moisture as possible.
Heat
- Sauté in a pan for about 5 minutes with your favorite sauce.
