
Homemade Mayonnaise

Ingredients
- 1 egg*
- 1 cup avocado oil*
- 1/2 lemon, juiced
- 1/4 tsp salt
Instructions
- Add all ingredients to the jar that came with your immersion blender or a wide cup.
- With the immersion blender pressed firmly to the base of the jar, blend all ingredients, lifting the immersion blender as the contents begin to mix.

-*I use a pasteurized egg. You can use a non-pasteurized egg at your discretion.
-*Instead of avocado oil, you may use another neutral-flavored oil, such as light-flavored olive oil (regular olive oil is too strongly flavored).
-The mayonnaise will last a few days to a week refrigerated.
