Beet Hummus

A deliciously healthy twist to traditional hummus

Ingredients

  • 2 red beets
  • 1 15.5 oz can garbanzo beans
  • 1/4 cup tahini
  • 2 Tbsp extra virgin olive oil
  • 2 lemons, juiced
  • 2 Tbsp water
  • 1 garlic clove
  • 1/2 tsp cumin
  • 1 tsp salt

Instructions

  • Wrap each beet individually with parchment paper or aluminum foil, based on your preference. 
  • Roast the beets at 400°F/204°C for 1 hour or until soft when poked with a fork.
  • Once cooled, peel the skin off the beets with your fingers.
  • Rinse and drain the garbanzo beans.
  • Place all ingredients in a food processor and blend until smooth and creamy.

Notes

-Add more water or lemon juice to thin to your desired consistency.
-Add more garlic cloves for a delicious garlic hummus.
