Gluten-Free, Low-Carb Comfort Bread

Ingredients
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 2 tsp allulose (or preferred sweetener*)
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt
- 3 eggs
- 3/4 cup plain Greek yogurt
- 1 Tbsp butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
- In a large mixing bowl, stir together the almond flour, coconut flour, allulose, baking powder, baking soda, and salt until well combined.
- In a separate bowl, beat the eggs, then add the Greek yogurt and melted butter. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until a thick, even batter forms.
- Transfer the batter to the prepared baking pan, smoothing the top with a spatula.
- Bake for 45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

-*Allulose is about 70% as sweet as regular sugar, so if you decide to substitute with regular sugar, only use ~1 1/2 tsp.
-*If using a liquid sweetener like maple syrup, add ~2 teaspoons of almond flour to maintain the right texture and prevent the bread from becoming too moist.
