
No-Sugar Date Fudge
Naturally sweet date fudge made with simple, whole-food ingredients. No refined sugar.

Ingredients
- 2 cups pitted Medjool dates
- 1 cup raw nuts (almonds, walnuts, cashews, etc.) or nut butter (half the quantity)
- 1/4 cup unsweetened cacao powder
- 1/4 tsp salt
- 2 Tbsp coconut oil (melted)
- 2 tsp vanilla extract
Instructions
- In a food processor or a powerful blender, combine all ingredients until smooth. If you don’t have a powerful food processor/blender, you will definitely need to substitute nut butter for the nuts.
- Line a small square pan (about 8x6 inch/ 20x15 cm) with parchment paper. Press the mixture evenly into the pan.
- Sprinkle with chopped nuts, coconut flakes, goji berries, etc., if desired, pressing lightly so they stick.
- Place in the fridge for at least 1 hour until firm.
- Remove from the pan, slice into squares, and enjoy! Keep refrigerated in an airtight container for up to 1 week, or freeze for longer storage.
