3/4cupfull-fat cottage cheese, ideally with probiotics
1cupdark chocolate chips
1/4tspsalt
2Tbspcoconut milk*
Instructions
Melt the chocolate by microwaving in short bursts, stirring between each burst until smooth. Optional: Use a double boiler if you prefer.
Let the chocolate cool slightly — it should be smooth and slightly warm, not hot, so it won’t kill the probiotics in the cottage cheese.
Add all ingredients to a blender or food processor and blend until smooth.
Poon the mixture into a parchment-lined container and press down to smooth. Freeze for 15 minutes until firm.
Cut into squares and enjoy!

-*Melted butter or nut butter can be used instead of coconut milk.-Can be stored in the freezer or fridge; they firm up quickly and hold their shape well.
