
Cottage Cheese Fudge
High-protein yet creamy cottage cheese fudge that melts in your mouth

Ingredients
- 3/4 cup full-fat cottage cheese, ideally with probiotics
- 1 cup dark chocolate chips
- 1/4 tsp salt
- 2 Tbsp coconut milk*
Instructions
- Melt the chocolate by microwaving in short bursts, stirring between each burst until smooth. Optional: Use a double boiler if you prefer.
- Let the chocolate cool slightly — it should be smooth and slightly warm, not hot, so it won’t kill the probiotics in the cottage cheese.
- Add all ingredients to a blender or food processor and blend until smooth.
- Poon the mixture into a parchment-lined container and press down to smooth. Freeze for 15 minutes until firm.
- Cut into squares and enjoy!

-*Melted butter or nut butter can be used instead of coconut milk.
-Can be stored in the freezer or fridge; they firm up quickly and hold their shape well.
