In a large bowl, combine the sprouted mung beans, carrots, red cabbage, and red bell pepper.
In a small bowl or jar, add the peanut butter, soy sauce, lime juice, maple syrup, and grated garlic. Shake until smooth.
Pour the dressing over the salad and toss gently to coat evenly.
Top the salad with chopped roasted peanuts and fresh cilantro before serving.
