
Peanut Mung Bean Sprout Salad

Ingredients
Salad
- 2 cups sprouted mung beans
- 2 carrots, shredded
- 1/2 cup red cabbage, thinly sliced
- 1 red bell pepper, thinly sliced
- 3 Tbsp chopped roasted peanuts
- fresh cilantro
Dressing
- 2 Tbsp peanut butter
- 1 Tbsp soy sauce or tamari
- 1 Tbsp lime juice
- 1 Tbsp maple syrup or honey
- 1 1/2 garlic cloves, grated
Instructions
- In a large bowl, combine the sprouted mung beans, carrots, red cabbage, and red bell pepper.
- In a small bowl or jar, add the peanut butter, soy sauce, lime juice, maple syrup, and grated garlic. Shake until smooth.
- Pour the dressing over the salad and toss gently to coat evenly.
- Top the salad with chopped roasted peanuts and fresh cilantro before serving.
