medium red onion,
thinly sliced

warm water

apple cider vinegar

salt

honey or maple syrup
Instructions
Pack the sliced onion into a clean pint-sized glass jar.
In a measuring cup or small bowl, whisk together the warm water, apple cider vinegar, honey (or maple syrup), and salt until the salt dissolves.
Pour the pickling liquid over the onions, making sure they are fully submerged. Press them down gently if needed.
Refrigerate for at least 1 hour, though they're even better after several hours or overnight.

-Store the pickled onions in an airtight container in the refrigerator for 2–3 weeks.
