Zucchini Frittata

A great way to meal prep eggs and get some veggies!

Ingredients

  • 1 zucchini, grated
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup tomato, diced
  • 1/3 cup cilantro, diced
  • 1 cup sharp cheddar cheese, shredded
  • 6 eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat the oven to 400°F/204°C.
  • Squeeze the liquid from the grated zucchini using a nut milk bag, cheesecloth, or thin towel.
  • Mix all the ingredients in a large bowl.
  • Pour the mixture into a large, greased skillet or baking dish.
  • Bake for 30 minutes or until the egg is solid and the edges are golden brown.
