Peanut Mung Bean Sprout Salad

Ingredients

Salad

  • 2 cups sprouted mung beans
  • 2 carrots, shredded
  • 1/2 cup red cabbage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 Tbsp chopped roasted peanuts
  • fresh cilantro

Dressing

  • 2 Tbsp peanut butter
  • 1 Tbsp soy sauce or tamari
  • 1 Tbsp lime juice
  • 1 Tbsp maple syrup or honey
  • 1 1/2 garlic cloves, grated

Instructions

  • In a large bowl, combine the sprouted mung beans, carrots, red cabbage, and red bell pepper.
  • In a small bowl or jar, add the peanut butter, soy sauce, lime juice, maple syrup, and grated garlic. Shake until smooth.
  • Pour the dressing over the salad and toss gently to coat evenly.
  • Top the salad with chopped roasted peanuts and fresh cilantro before serving.
